White Wines

The difference between white wine and red wine has to do with the winemaking process. After the finest white wine grapes are chosen, they are sorted and pressed, then left to settle. As a result this allows the skins, seeds, and stems to fall to the bottom of the tanks. That is to say white wine is made only from the clear white wine grape juice. In short, there are no seeds, skins or stems used in the production of white wines.

The Niagara Wine Region

Niagara wines are grown from grapes nurtured in the sunny climes of the Niagara Escarpment. The 43 degree North latitude is similar to that of the Languedoc regions of Southern France and the Chianti Classico of Italy; similarly known for their exquisite white wines.

The limestone soils which rim Lake Ontario merge with elements of chalk and clay. Consequently this creates favourable conditions for growing vitis vinifera – white wine grapes. The most popular varietals grown for Niagara white wines are Vidal Blanc, Riesling, Chardonnay, Pinot Grigio, Sauvignon Blanc, and Gewürztraminer.

White Icewine

The Niagara Escarpment produces wonderful white wines with balanced acidity. However, the absolute Niagara wine crown has to go to our elegant icewines. Picked when still on the vine, frozen Riesling grapes have a reduced water content, concentrating into a sublime nectar, making it a natural companion for first course pâte or cheese. Likewise this versatile sipping wine is also excellent paired with a delicious fruit pastry final course.
