Icewines

Icewine is created from grapes that have been frozen before fermentation while still on the vine. In this way, the sugars do not freeze, but the water does, providing a more concentrated grape juice. This creates less wine as a result, but produces a refreshing sweetness balanced by high acidity. 75% of the Icewine in Canada, comes from Ontario.
